Ingredients

  • 4 medium cucumbers (sliced)
  • 1 tsp coarse salt
  • 2 cloves garlic (minced)
  • 1 tbsp Korean red pepper flakes (gochugaru)
  • 1 tsp sugar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Wash and slice the cucumbers into thin rounds or half-moons.
  2. Place cucumber slices in a bowl, sprinkle with salt, and let sit for 30 minutes to draw out moisture.
  3. In another bowl, combine minced garlic, gochugaru, sugar, soy sauce, and sesame oil; whisk until smooth.
  4. Rinse cucumbers under cold water to remove excess salt; drain well.
  5. Toss cucumbers with the dressing until evenly coated.
  6. Chill in the refrigerator for 15-20 minutes before serving. Garnish with sesame seeds if desired.
