  • 1 lb lean ground beef
  • 2 medium eggplants, sliced into ?-inch rounds
  • 1 medium onion, finely chopped
  • 34 garlic cloves, minced
  • 2 cups tomato sauce
  • 1 cup shredded mozzarella cheese (or Parmesan)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375?F (190?C).
  2. Slice eggplants, sprinkle with salt, and let sit for 20 minutes to draw out moisture.
  3. In a skillet, heat olive oil and saut? onions until translucent. Add garlic and ground beef; cook until browned.
  4. Stir in tomato sauce and seasoning; simmer for 5 minutes.
  5. In a baking dish, layer eggplant slices and half of the meat mixture. Repeat layers.
  6. Top with cheese and bake for 30-35 minutes until bubbly and golden.
