Instructions

- Chop mixed vegetables into uniform bite-sized pieces.
- Peel tangerines and separate into segments; reserve half for garnishing.
- In a large bowl, toss chopped vegetables with olive oil, sumac, salt, and pepper. Add tangerine segments for roasting.
- Spread the mixture evenly on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown and tender, stirring halfway through.
- Remove from oven, garnish with reserved tangerine segments, and serve warm.
