Sourdough Sun-Dried Tomato Artichoke Dressing is a delightful blend of tangy sun-dried tomatoes and artichokes with the rustic texture of toasted sourdough.   • 1 cup day-old sourdough bread, cubed
  • ? cup oil-packed sun-dried tomatoes, drained
  • ? cup artichoke hearts, chopped
  • ? cup extra virgin olive oil
  • ? cup fresh basil leaves
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350?F (175?C). Spread sourdough cubes on a baking sheet and toast for about 10 minutes until golden brown.
  2. In a food processor, combine toasted sourdough, sun-dried tomatoes, artichokes, olive oil, basil, and lemon juice. Pulse until finely chopped but still textured.
  3. Season with salt and pepper to taste.
  4. Transfer to an airtight container and chill in the fridge for at least one hour to meld flavors.
  5. Serve chilled over salads or as a dip.
