- 1 cup bulgur wheat
- 1 cup flat-leaf parsley, finely chopped
- 1 cup English cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1 small red onion, finely diced
- 2 preserved limes, diced
- 3 tablespoons extra virgin olive oil
- Juice of 1/2 fresh lemon
- Salt and pepper to taste
Instructions
- Rinse bulgur wheat under cool water, then cover it with boiling water in a bowl. Let sit for about 20 minutes until fluffy.
- While bulgur soaks, chop parsley and cucumber, dice cherry tomatoes, and finely slice red onion.
- Dice preserved limes and discard seeds.
- Fluff cooled bulgur with a fork; combine it with chopped veggies and preserved limes in a large bowl.
- Drizzle olive oil and lemon juice over the mixture; toss gently to combine.
- Season with salt and pepper to taste; chill in the fridge for one hour before serving.
