  • 1 lb fresh green beans, trimmed
  • 2 cups sweet corn kernels (fresh or frozen)
  • 2 tbsp unsalted butter, divided
  • 2 tbsp freshly squeezed lime juice
  • Salt and pepper to taste

Instructions

  1. Wash the green beans under cold water and trim the ends.
  2. Boil a pot of salted water and blanch the green beans for 3-4 minutes until bright green but still crisp. Transfer to an ice bath.
  3. In a skillet, melt 1 tablespoon of butter over medium heat. Add corn and saut? for about 5 minutes until heated through.
  4. Drain the green beans from the ice bath and add them to the skillet with corn. Toss over medium heat.
  5. Drizzle lime juice and remaining butter into the skillet, stirring until evenly coated.
  6. Season with salt and pepper to taste before serving.
