Ingredients

  • 2 cups carrot tops, washed and dried
  • 2 garlic cloves
  • 1/4 cup pine nuts (toasted)
  • 1/4 cup Parmesan cheese (or nutritional yeast for vegan option)
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients.
  2. Rinse and dry carrot tops thoroughly.
  3. In a dry skillet over medium heat, toast the pine nuts until golden brown, about 3-5 minutes.
  4. In a food processor, combine carrot tops, garlic, toasted pine nuts, Parmesan cheese (or nutritional yeast), lemon juice, and half the olive oil. Pulse until finely chopped.
  5. With the processor running, drizzle in remaining olive oil until desired consistency is reached (smooth or chunky).
