Ingredients
  

For the Meatloaf
  • 1 lb Ground chicken a great lean protein base
  • 1 cup Breadcrumbs can use whole wheat for added fiber
  • 2 large Eggs acts as a binder
  • 1/2 cup Greek yogurt adds creaminess and tang
  • 2 tbsp Tandoori spice blend the star of this recipe
  • 3 cloves Garlic minced
  • 1 medium Onion finely chopped
  • 1/4 cup Cilantro fresh and vibrant
For the Glaze
  • 1/4 cup Tomato paste can substitute with ketchup
  • 2 tbsp Honey adds sweetness
  • 1 tbsp Lemon juice enhances flavors

Method
 

Preparation
  1. Preheat your oven to 350?F (175?C).
  2. Mix the ground chicken with spices in a large bowl.
  3. Add breadcrumbs and eggs to the mixture.
  4. Shape the mixture into a loaf on a baking sheet lined with parchment paper.
  5. Bake the meatloaf for about 45-50 minutes, or until it reaches an internal temperature of 165?F (74?C).
  6. For the Glaze: In a small bowl, combine yogurt and lemon juice. Brush this glaze over the meatloaf during the last 10 minutes of baking.
  7. Rest the meatloaf for at least 10 minutes before slicing.
