Ingredients
  

Lamb
  • 2 pounds boneless lamb leg trimmed and tied
Marinade
  • 1/2 cup honey preferably local
  • 1/4 cup soy sauce low sodium recommended
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Marinade
  1. In a bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, chopped rosemary, and black pepper until well combined.
Marinate the Lamb
  1. Place the boneless lamb leg in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
Preheat the Oven
  1. Preheat your oven to 350?F (175?C).
Roast the Lamb
  1. Remove the lamb from the marinade and place it in a roasting pan. Reserve the marinade for basting.
  2. Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 145?F (63?C) for medium-rare.
  3. Baste the lamb with the reserved marinade every 30 minutes during roasting.
Rest and Serve
  1. Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  2. Garnish with chopped parsley before serving.
