  • 1 lb Ground beef 80/20 mix for flavor and moisture
  • 1/2 cup Fresh cilantro Chopped
  • 1/4 cup Fresh mint Chopped
  • 1 cup Breadcrumbs Whole wheat for added texture
  • 2 large Eggs Or flax eggs for vegan option
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Worcestershire sauce Or tamari for gluten-free
For the Glaze
  • 1/2 cup Ketchup Or barbecue sauce for a smoky flavor
  • 1 tbsp Brown sugar To balance acidity
  • 1 tbsp Apple cider vinegar For tanginess

Method
 

Preparation
  1. Preheat your oven to 350?F.
  2. Mix the ground beef with chopped cilantro, mint, breadcrumbs, and eggs in a large bowl until just combined.
  3. Season the mixture with salt, pepper, and garlic powder.
  4. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
Glaze
  1. Combine ketchup, Worcestershire sauce, and a splash of lime juice in a small bowl.
  2. Spread the glaze generously over the top of your shaped meatloaf.
Baking
  1. Bake for 45-55 minutes or until the internal temperature reaches 160?F.
  2. Rest the meatloaf for at least 10 minutes before slicing.
