  • 2 large Eggs or flax eggs for vegan
  • 1/2 cup Cocoa powder unsweetened
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
Optional Topping
  • 1/2 cup Chocolate chips for extra gooeyness
  • 1/2 cup Chopped nuts walnuts or pecans

Preparation
  1. Preheat your oven to 350?F (175?C) and prepare an 8x8 inch baking pan by lining it with parchment paper.
  2. Blend the cooked beetroot until smooth, creating a vibrant puree.
  3. Mix together the dry ingredients: flour, cocoa powder, baking powder, and salt in a large bowl.
  4. Combine the wet ingredients in a separate bowl: whisk together the beetroot puree, melted butter, sugar, and vanilla extract until creamy.
  5. Fold the dry mixture into the wet mixture using a spatula until just combined.
  6. Pour the batter into your prepared baking pan and smooth the top with a spatula.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs attached.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack.
