Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 2 tbsp soy sauce for marinating
  • 1 tbsp cornstarch for coating
  • 1 tbsp vegetable oil for cooking
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to taste
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup green onions sliced

Method
 

Prepare Chicken
  1. In a mixing bowl, combine the chicken pieces with soy sauce and let marinate for 10 minutes.
  2. After marinating, coat the chicken pieces with cornstarch.
  3. Heat vegetable oil in a skillet over medium heat and cook the chicken until golden brown and cooked through, about 5-7 minutes.
Make Bang Bang Sauce
  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth.
Assemble Bowl
  1. In a serving bowl, place a portion of cooked rice.
  2. Top with cooked chicken, sliced cucumber, shredded carrots, and green onions.
  3. Drizzle with Bang Bang sauce and serve immediately.

Notes

Feel free to adjust the spiciness of the sauce by adding more or less sriracha.
