Preparation
  1. Gather ingredients. Start by collecting ripe avocados, cocoa powder, maple syrup, and vanilla extract.
  2. Blend avocados. Scoop the ripe avocados into a blender or food processor. Blend until smooth and creamy; this should take about 1-2 minutes.
  3. Add cocoa powder. Sprinkle in the cocoa powder and blend again until fully combined.
  4. Incorporate sweetener. Pour in the maple syrup and add a splash of vanilla extract. Blend for another minute.
  5. Taste and adjust. Before serving, taste your mousse and add more syrup if desired, blending again.
  6. Chill before serving. Transfer the mousse into serving dishes and refrigerate for at least 30 minutes.
