Ingredients

  • 1 cup tri-color quinoa
  • 2 cups water
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh collard greens, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water; combine with water and a pinch of salt in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and saut? for about 1 minute until fragrant.
  3. Stir in collard greens; cook until wilted (5-7 minutes).
  4. Fluff cooked quinoa and add to the skillet with collard greens; mix well.
  5. Drizzle lemon juice over the mixture and season with salt and pepper. Toss well to combine.
  6. Serve in bowls, garnished with additional lemon wedges or toasted nuts if desired.
