  • 2 medium sweet potatoes (500g), peeled and diced
  • 2 cups green or red cabbage (200g), chopped
  • 3 cups fresh baby spinach (90g)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp smoked paprika

Instructions

  1. Preheat oven to 425?F (220?C). Toss diced sweet potatoes with olive oil, salt, pepper, and paprika on a baking sheet. Roast for 25-30 minutes until tender and crispy.
  2. In a skillet over medium heat, add olive oil and minced garlic. Saut? for one minute until fragrant.
  3. Add chopped cabbage; cook for 5-7 minutes until softened. Stir in spinach and cook until wilted (about 2 minutes).
  4. Combine roasted sweet potatoes with saut?ed greens in a bowl. Adjust seasoning as desired.
  5. Serve immediately while warm.
