Ingredients
- 2 medium-sized fresh beets

Instructions

- While beets roast, wash and dry mixed greens.
- Blend strawberries, balsamic vinegar, olive oil, salt, and pepper in a blender until smooth to make the vinaigrette.
- Once cooled, peel roasted beets and slice into wedges or cubes.
- In a large bowl, layer mixed greens and roasted beets; drizzle with vinaigrette and toss gently.
