Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups kale, chopped
  • 2 cups cabbage, sliced
  • 1 cup carrots, grated
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  2. In a skillet over medium heat, heat olive oil. Add kale and cabbage; saut? for about 5 minutes until wilted.
  3. Stir in carrots and tomatoes; cook for an additional 3 minutes until tomatoes soften.
  4. Season with lemon juice, salt, and pepper; mix well.
  5. Fluff cooked quinoa with a fork and combine with saut?ed vegetables.
  6. Serve warm in bowls; garnish with lemon slices or nuts if desired.
