  • 4 cups shredded green cabbage
  • 2 medium beets, roasted and chopped
  • 1 cup grated carrots

  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400?F (200?C). Wrap beets in foil and roast for 45 minutes until fork-tender. Let cool before peeling and chopping.
  2. In a large bowl, combine shredded cabbage and grated carrots.
  3. Whisk together orange juice, olive oil, honey, salt, and pepper in a small bowl until emulsified.
  4. Add chopped beets and vinaigrette to the vegetable mixture; toss gently until combined.
