Description

Taco bake casserole with tortillas is a delightful, layered dish that seamlessly blends seasoned ground beef, black beans, colorful bell peppers, and melted cheese between soft tortillas.   • 1 lb lean ground beef
  • 6 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers (any color), chopped
  • 1 packet taco seasoning
  • ? cup water
  • Sour cream (for topping)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 375?F (190?C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
  3. Layer tortillas in the baking dish, followed by half of the beef mixture, black beans, bell peppers, and 1 cup of cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  4. Bake for 25-30 minutes until golden and bubbly. Let cool slightly before serving topped with sour cream and cilantro.
