  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup buffalo sauce
  • 1 can (15 oz) black beans, rinsed
  • 1 can (15 oz) kidney beans, rinsed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1 tsp cumin
  • 1 tbsp chili powder

Instructions

  1. Chop the onion, celery, and garlic.
  2. Place the chicken breasts in the slow cooker. Layer with chopped onions, celery, and garlic.
  3. Add diced tomatoes (with juices), black beans, kidney beans, and buffalo sauce. Stir gently.
  4. Sprinkle cumin and chili powder over the mixture and stir again.
  5. Cover and cook on low for 6 hours or high for 3 hours until chicken shreds easily.
  6. Shred the chicken in the pot before serving. Top with cheese or sour cream if desired.
