Ingredients

  • 1 lb lean ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 4 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400?F (200?C) and prepare an oven-safe baking dish.
  2. In a skillet over medium heat, saut? onions and carrots in a splash of oil for about 5 minutes until softened.
  3. Add ground beef or lamb to the skillet, breaking it apart as it cooks for about 7 minutes until browned. Drain excess fat if necessary.
  4. Stir in minced garlic and frozen peas. Add beef broth and Worcestershire sauce; simmer for 10 minutes until slightly thickened.
  5. If making fresh mashed potatoes, boil peeled potatoes until tender (about 20 minutes), then mash with butter and milk until creamy.
  6. Spread the meat mixture evenly in the baking dish and top with mashed potatoes. Optionally sprinkle shredded cheese on top.
  7. Bake for approximately 30 minutes or until golden brown. Serve warm.
