16 oz cream cheese (room temperature)

8 oz mascarpone cheese

3/4 cup sugar

1 cup brewed coffee (cooled)

24 ladyfingers

1 cup heavy cream (whipped)

1 ? cups crushed graham crackers

1/3 cup melted butter

2 tablespoons cocoa powder


Instructions

1. Preheat oven to 350?F (175?C). Combine crushed graham crackers, melted butter, and sugar; press into a springform pan. Bake for 10 minutes and cool.

2. In a large bowl, beat cream cheese, mascarpone, and sugar until smooth. Gradually add cooled coffee and mix gently.

3. Fold in whipped cream carefully to maintain volume.

4. Soak half the ladyfingers in remaining coffee and layer on the crust. Spread half the cheesecake filling over them. Repeat with remaining ladyfingers and filling.

5. Dust top with cocoa powder. Bake at 325?F (160?C) for about an hour until edges are firm but center jiggles slightly. Cool slowly in oven, then refrigerate for at least four hours or overnight.
