Serve it alongside creamy mashed potatoes and seasonal vegetables for an unforgettable dining experience.

Ingredients

Scale

45 lb bone-in lamb shoulder

– 3-4 sprigs fresh rosemary

– 4-6 cloves garlic

– 1/4 cup extra virgin olive oil

– Kosher salt and freshly ground black pepper

Instructions

Prepare the marinade by mixing chopped garlic, minced rosemary, olive oil, salt, and pepper in a bowl.

2. Rub the marinade all over the lamb shoulder and let it marinate in the refrigerator for at least 4 hours or overnight.

3. Preheat the oven to 300?F (150?C). Place the lamb in a roasting pan with 1 cup of water or broth.

4. Cover tightly and roast for about 4 hours until fork-tender.

5. Uncover, glaze with remaining marinade, increase temperature to 375?F (190?C), and roast for an additional hour until golden brown.

6. Let rest for 15-20 minutes before carving.

Notes

For added flavor, consider using red wine in place of some of the water or broth.

Experiment with herbs like thyme or oregano for a different twist on flavor.
