  • 1 lb ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups marinara sauce
  • 4 soft sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, Parmesan cheese, Italian seasoning, salt, and pepper until well combined.
  3. Shape the mixture into fist-sized meatballs and place them on the prepared baking sheet.
  4. Bake for about 25 minutes or until golden brown and cooked through.
  5. While meatballs are baking, heat marinara sauce in a saucepan over medium heat.
  6. Assemble subs by placing two to three meatballs in each roll, topping with marinara sauce and shredded mozzarella.
  7. Broil subs until the cheese is bubbly and golden brown. Serve hot.
