Description

Ingredients

Jumbo pasta shells

Fresh spinach

Ricotta cheese

Parmesan cheese

Marinara sauce

Garlic

Olive oil


Instructions

Preheat the oven to 375?F (190?C).

Cook jumbo pasta shells in salted boiling water until al dente. Drain and cool in an ice bath.

Saut? minced garlic in olive oil, then add fresh spinach until wilted. Let cool.

In a bowl, mix ricotta cheese, saut?ed spinach, grated Parmesan, salt, and pepper.

Fill each shell with the ricotta-spinach mixture. Arrange in a baking dish with half of the marinara sauce at the bottom and pour the remaining sauce on top.

Sprinkle with reserved Parmesan and cover with foil. Bake for 20 minutes covered, then uncover and bake for an additional 15 minutes until bubbly.

Notes

Feel free to use frozen spinach?just thaw and drain well before mixing it into the filling. For added flavor, experiment with different cheeses like mozzarella or goat cheese.
