Ingredients

Scale

1 cup dried lentils (brown or green)

2 medium-sized carrots

1 large onion

3 cloves garlic

4 cups vegetable broth

2 tablespoons olive oil

Spices: 1 teaspoon ground cumin, 1 teaspoon ground coriander, ? teaspoon turmeric powder

Salt & pepper to taste


Instructions

Rinse lentils under cold water until clear; drain well.

Peel and chop carrots into thin rounds or small cubes. Dice onion and mince garlic.

In a large pot, heat olive oil over medium heat. Saut? onions until translucent (about 5 minutes), then add garlic and saut? for another minute.

Stir in spices and saut? for 30 seconds.

Add lentils and vegetable broth to the pot; bring to a boil, then reduce heat and simmer for about 30 minutes until lentils are tender.

Add carrots and cook for an additional 15 minutes uncovered until they are tender.

Notes

For added nutrition, throw in some spinach or kale during the last few minutes of cooking.

Adjust spice levels by adding chili powder if you prefer heat.
