  • 2 cans (28 oz each) whole tomatoes
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm olive oil. Add chopped onion and saut? until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Pour in the canned tomatoes with their juice and break them up slightly with a wooden spoon.
  3. Add the vegetable broth to the pot. Stir well and bring to a gentle simmer.
  4. Season with salt, pepper, and any optional spices you prefer. Allow the soup to simmer on low for about 15 minutes.
  5. Remove from heat and blend until smooth using an immersion blender or transfer to a blender in batches.
  6. Return the blended soup to low heat, stir in chopped fresh basil just before serving.

Notes

For chunkier soup, blend only half of the mixture.

Stir in coconut milk during blending for added creaminess without dairy.
