Ingredients

Scale

2 cups glutinous rice

1 can (400 ml) coconut milk

1 cup brown sugar

1/4 teaspoon salt

1 cup coconut cream (optional, for topping)


Instructions

Rinse soaked glutinous rice under cold water until clear, then steam for about 30 minutes until tender but chewy.

In a separate pot, combine coconut milk, brown sugar, and salt over medium heat. Simmer for about 10 minutes until flavors meld.

Mix two-thirds of the coconut mixture with steamed rice until evenly coated. Transfer to a greased baking pan.

Pour the remaining coconut mixture on top and bake at 350?F (175?C) for 25-30 minutes until set and golden brown.

Allow to cool completely before slicing into squares.

Notes

Customize your Biko by adding toppings like latik (coconut cream reduction) or fresh fruits.
