- 1 lb bone-in short ribs
- 8 oz fresh chorizo
- 1 medium sweet onion, diced
- 4 cloves garlic, minced
- 2 bell peppers (any color), chopped
- 14 oz canned diced tomatoes (with juice)
- 15 oz kidney beans (drained)
- 4 cups beef broth
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add 1 tbsp olive oil. Brown the short ribs for about 5 minutes on each side. Remove and set aside.
- In the same pot, add the chorizo and cook until browned and crumbly (about 7 minutes).
- Stir in the onion, garlic, and bell peppers; saut? until softened (about 5 minutes).
- Return the short ribs to the pot, add diced tomatoes, kidney beans, spices, salt, and pepper. Mix well.
- Pour in enough beef broth to cover the ingredients (approximately 4 cups) and bring to a simmer.
- Reduce heat to low and let it simmer for at least 2 hours or until the meat is tender.
- Serve hot with garnishes like sour cream or cilantro.
