Instructions

  2. Wash, peel, and chop the carrots, parsnips, and beets into uniform one-inch cubes.
  3. In a large bowl, toss the chopped vegetables with olive oil, maple syrup, cumin, salt, and pepper until well-coated.
  4. Spread the veggies evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 30-35 minutes, flipping halfway through for even browning.
  6. Remove from oven when fork-tender and caramelized; serve warm.
