- 2 salmon fillets (about 6 oz each)
- 1 cup short-grain rice
- 1/4 cup negi (Welsh onion), chopped
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 2 tbsp mirin
- 2 cups vegetable broth
- 1 cup mixed seasonal vegetables (optional)
Instructions
- Rinse the rice under cold water until the water runs clear; set aside.
- In a large pot over medium heat, add oil and saut? minced garlic for about one minute. Add chopped negi and saut? until softened.
- Stir in rinsed rice, cooking for about two minutes until well-coated in oil.
- Pour in vegetable broth, soy sauce, and mirin; bring to a boil then reduce heat to low.
- Nestle salmon fillets skin-side down on top of the rice mixture. Cover tightly and simmer for 15 minutes until cooked through.
- Remove salmon, fluff the rice with a fork, and serve topped with flaked salmon and extra negi sauce.
