  • 1 lb ground beef (80/20 blend)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth

Instructions

  1. Preheat oven to 400?F (200?C). In a bowl, combine ground beef, breadcrumbs, eggs, Parmesan cheese, garlic powder, salt, and pepper until well mixed.
  2. Shape the mixture into golf-ball-sized meatballs and place on a parchment-lined baking sheet. Bake for about 20 minutes until browned.
  3. Rinse rice under cold water. In a saucepan, bring chicken broth to a boil. Add rice, cover, reduce heat to low, and cook until tender.
  4. Once meatballs are cooked, transfer them to marinara sauce in a pan over low heat for about five minutes.
  5. Serve meatballs over fluffy rice with additional sauce if desired.
