- 2 lbs chuck roast, cut into cubes
- 1 large onion, finely chopped
- 6 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 28 oz can crushed tomatoes
- 2 cans kidney beans (15 oz each), rinsed and drained
- 1 tbsp cumin
- 3 tbsp chili powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- Oil for searing
Instructions
- Chop the chuck roast into bite-sized cubes.
- Heat oil in a large pot over medium-high heat. Sear the beef until browned on all sides; remove and set aside.
- In the same pot, saut? onions, garlic, and bell peppers until softened.
- Return the beef to the pot; add crushed tomatoes, kidney beans, cumin, chili powder, smoked paprika, salt, and pepper. Stir well.
- Cover and reduce heat to low; let simmer for at least one hour, stirring occasionally.
- Adjust seasoning as needed before serving hot with cornbread or tortilla chips.
