  • 2 cups Yukon Gold potatoes, quartered
  • 2 cups fresh broccoli florets
  • 2 cups low-sodium beef broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 325?F (160?C).
  2. Heat olive oil in a large skillet over medium-high heat. Season the beef roast with salt and pepper, then sear for about four minutes on each side until browned.
  3. Remove the beef and saut? chopped onion and minced garlic in the same skillet until fragrant, about three minutes.
  4. Return the beef to the skillet, add beef broth until it covers half of the roast, and sprinkle with dried thyme.
  5. Roast potatoes at 400?F (200?C) for 30-35 minutes after tossing them in olive oil, salt, and pepper.
  6. Steam or blanch broccoli for three to five minutes before serving.
  7. Slice the braised beef and serve with roasted potatoes and broccoli.
