  • 1 lb lean ground bison
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup ketchup (plus more for glazing)
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 350?F (175?C) and lightly grease a baking dish or loaf pan.
  2. In a skillet over medium heat, saut? the chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. In a large bowl, combine ground bison, saut?ed onions and garlic, breadcrumbs, eggs, ketchup, soy sauce, salt, pepper, and thyme. Mix until just combined.
  4. Transfer the mixture into the prepared baking dish or loaf pan and shape it into a loaf. Smooth out any lumps.
  5. Spread additional ketchup on top for glazing.
  6. Bake for about one hour or until the internal temperature reaches 160?F (70?C). Allow to rest before slicing.
