Ingredients
2 pounds Yukon Gold or Russet potatoes
1 whole head of garlic
4 tablespoons unsalted butter
1/2 cup heavy cream (or milk)
Salt and pepper to taste
Instructions
Preheat the oven to 400?F (200?C). Wrap the whole head of garlic in foil with a drizzle of olive oil and roast for 30-35 minutes until soft.
Boil peeled and chopped potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
In a pot over low heat, combine the drained potatoes with roasted garlic cloves, melted butter, and warmed cream. Mash until desired consistency is reached.
