Ingredients

  • 8 oz fusilli pasta
  • 8 oz fresh burrata cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, torn
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli in salted boiling water according to package instructions until al dente. Drain and cool.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  3. In a large bowl, combine cooled pasta with cherry tomatoes and basil. Pour the dressing over and toss gently.
  4. Just before serving, tear burrata over the salad for added creaminess.
  5. Garnish with additional black pepper and torn basil if desired. Serve chilled or at room temperature.
