  • 2 cups fresh green peas (or thawed frozen peas)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • 1/3 cup sliced almonds, toasted
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse fresh green peas under cool water; if using frozen peas, thaw them in warm water.
  2. Dice the cucumber and halve the cherry tomatoes. Thinly slice the red onion.
  3. Toast the sliced almonds in a dry skillet over medium heat until golden brown.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large bowl, combine peas, tomatoes, cucumber, red onion, and toasted almonds. Drizzle dressing over the top and toss gently.
  6. Chill in the refrigerator for at least 30 minutes before serving.
