Ingredients

  • 2 cups fresh cucumbers (approximately 2 medium cucumbers)
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill (or mint)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 garlic clove
  • Salt & pepper to taste

Instructions

  1. Wash cucumbers under cold water. Peel if desired, then slice in half lengthwise and scoop out seeds. Chop into smaller pieces.
  2. In a blender, combine chopped cucumbers, Greek yogurt, dill, lemon juice, and garlic. Blend until smooth.
  3. Season with salt and pepper; blend briefly to combine.
  4. Transfer the soup to an airtight container and refrigerate for at least one hour to chill.
  5. Serve in bowls or glasses, garnished with extra dill or mint.
