Ingredients

  • 1 lb fresh white fish (tilapia or halibut)
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion
  • 1 cup diced ripe tomatoes
  • 1 cup diced cucumber
  • 8 tostadas

Instructions

  1. Cut the fresh fish into small cubes (about half an inch).
  2. In a bowl, combine the fish with lime juice. Cover and marinate for 30 minutes until the fish turns opaque.
  3. While the fish marinates, chop the red onion, tomatoes, cucumber, and cilantro.
  4. Drain some lime juice from the fish but retain a little for flavor. Mix in the chopped veggies and cilantro.
  5. Assemble by placing generous spoonfuls of ceviche on each tostada.
  6. Garnish with extra cilantro or avocado slices if desired and serve immediately.
