Description

4th of July Coconut Popsicles are the perfect summer treat, combining the rich creaminess of coconut milk with fresh, vibrant fruits like strawberries and pineapple. These delightful popsicles are not just refreshing but also a festive way to celebrate Independence Day. Easy to prepare and customizable, they are sure to be a hit at your next backyard barbecue or holiday gathering.


Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup fresh pineapple, chopped
  • 1 cup fresh strawberries, sliced
  • 2 tbsp honey or maple syrup (adjust to taste)

Instructions

  1. Chop the pineapple and wash the strawberries.
  2. In a blender, combine coconut milk and honey (or maple syrup). Blend until smooth.
  3. Fill popsicle molds one-third full with the coconut milk mixture, then layer in chopped pineapple and sliced strawberries.
  4. Insert wooden sticks into molds and freeze for at least 4 hours until solid.
  5. To remove popsicles, run warm water over the outside of the molds. Serve immediately or store in an airtight container in the freezer.
