- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- 15 oz canned tomato puree
- 1 cup coconut milk or heavy cream
- 2 tbsp garam masala
- 1 tsp ground cumin
- 1 tsp coriander powder
- Salt and pepper to taste
- 2 tbsp cooking oil
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper. In a large skillet over medium heat, add oil and brown the chicken until golden. Set aside.
- In the same skillet, saut? chopped onions until translucent. Add garlic and ginger; cook until fragrant.
- Stir in garam masala, cumin, and coriander; toast for a minute.
- Add tomato puree and coconut milk (or cream), stirring until smooth. Simmer gently.
