Ingredients

Fresh lasagna noodles

Basil pesto (store-bought or homemade)

Ricotta cheese

Mozzarella cheese

Grated Parmesan cheese

Spinach (optional)


Instructions

Preheat your oven to 375?F (190?C). Cook fresh lasagna noodles in boiling salted water until al dente. Drain and lay flat.

In a bowl, mix ricotta cheese, half of the basil pesto, and optional spinach.

Spread about 2 tablespoons of the filling onto each noodle and roll tightly.

Place the rolls seam-side down in a greased baking dish. Top with remaining pesto and shredded mozzarella.

Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
