Ingredients

2 medium fresh oranges

2 cups all-purpose flour

1 cup granulated sugar

1 tsp baking powder

1/2 cup unsalted butter, softened

1 large egg

1 tsp vanilla extract

1/2 cup heavy cream

1 cup powdered sugar


Instructions

Preheat oven to 350?F (175?C). Zest and juice the oranges; set aside.

In a bowl, beat butter and sugar until fluffy. Add egg and vanilla, mixing well.

Gradually mix in flour and baking powder, alternating with orange juice until combined. Fold in orange zest.

Scoop dough onto parchment-lined baking sheets, spacing them apart. Bake for 10-12 minutes until edges are golden.

For the cream filling, whip heavy cream until stiff peaks form, then mix in powdered sugar and remaining orange zest.

Once cookies cool, spread the cream filling between two cookies.
