  • 1 medium cauliflower (about 600g), cut into florets
  • 1 tbsp fresh ginger, peeled and finely chopped
  • 1 tsp spirulina powder
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by washing and cutting the cauliflower into florets. Peel and finely chop the ginger and garlic.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and saut? until translucent. Stir in minced garlic and ginger for about 1 minute.
  3. Add cauliflower florets to the pot and cook for about 5 minutes until they start to soften.
  4. Pour in vegetable broth until all ingredients are submerged. Simmer for about 10 minutes or until the cauliflower is fork-tender.
