Ingredients
1 medium green or savoy cabbage (about 2 pounds)
3 tablespoons white or yellow miso paste
4 tablespoons unsalted butter
2 tablespoons olive oil
2–3 cloves garlic, minced
Freshly cracked black pepper
Instructions
Preheat your oven to 400?F (200?C). Line a baking sheet with parchment paper.
Rinse the cabbage, remove damaged leaves, and cut it into thick wedges (about 1 inch) without removing the core.
In a small saucepan, melt unsalted butter and olive oil over low heat. Stir in miso paste and minced garlic until well combined.
Place the cabbage wedges on the prepared baking sheet. Pour half of the miso butter mixture over them, tossing to coat evenly. Drizzle the remaining mixture on top and season with black pepper.
Roast for 25 minutes, then flip the wedges carefully and roast for an additional 15-20 minutes until both sides are crispy.
Notes
