Ingredients
16 oz cream cheese (softened)
½ cup granulated sugar
1 cup fresh strawberries (sliced or pureed)
1 cup graham cracker crumbs
4 tbsp unsalted butter (melted)
1 tsp vanilla extract
2 large eggs
Instructions
Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of each muffin cup.
In another bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing gently.
Fold in strawberries before spooning the mixture onto the crusts.
Bake for 15-20 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
