Ingredients
2 cups cooked, shredded chicken breast
8–10 corn or flour tortillas
1 can (15 ounces) black beans, rinsed and drained
2 cups shredded cheddar cheese (or your favorite cheese)
1 cup salsa
2 medium bell peppers, chopped
Instructions
Preheat your oven to 350?F (175?C).
If necessary, cook the chicken until fully done, then shred.
Chop the bell peppers finely.
In a baking dish, layer tortillas, followed by half of the chicken, black beans, salsa, bell peppers, and cheese. Repeat layers ending with cheese on top.
Cover with foil and bake for 25 minutes; uncover and bake for another 10-15 minutes until bubbly and golden.
Notes
For extra spice, add jalape?os or use spicy salsa. To make it vegetarian, swap chicken for additional beans or roasted vegetables.
