  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup fresh dill, chopped
  • Zest and juice of 2 lemons
  • 3 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • 2 cups mixed vegetables (bell peppers, cucumbers, cherry tomatoes)
  • 1 cup plain Greek yogurt
  • 1 tbsp honey

Instructions

  1. In a bowl, combine lemon juice, zest, minced garlic, dill, olive oil, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes (up to overnight).
  2. Chop your choice of vegetables into bite-sized pieces.
  3. If grilling, set to medium-high heat; if baking, preheat to 400?F (200?C).
  4. Grill or bake the marinated chicken until golden brown and cooked through?6-7 minutes per side on the grill or approximately 25 minutes in the oven.
  5. In a small bowl, mix Greek yogurt with honey until smooth.
  6. Slice cooked chicken into strips and arrange over chopped veggies in serving bowls. Drizzle with the yogurt sauce before serving.
