Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup cooked quinoa

  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Rinse quinoa under cold water and boil with 2 cups of water until fluffy (about 15 minutes).
  2. While quinoa cooks, chop cherry tomatoes and slice cucumber.
  3. In a large bowl, combine mixed greens with chopped veggies.
  4. Fluff cooled quinoa and add it to the salad mix along with crumbled feta.
